Honey Cream Cheese Stuffed Churro Cookies

Let’s talk about churros, shall we?

Surely you know what a churro is, but just in case you don’t, they are doughnut like sticks fried in oil and covered in cinnamon sugar. They have a delectable aroma that can be smelled for miles and I pretty much eat at least one every time I visit Disneyland because they have the best churros in the WORLD. I’ve never been farther than Mexico, but I am *almost* positive there are no better churros than at Disneyland.

Last night, as I was re-watching Game of Thrones (which I have to do regularly in order to get all of the details/dialogue, etc) a thought popped into mind…..churro cookies. I don’t know what it was about Game of Thrones that made me think of churro cookies but, it doesn’t really matter because it was a brilliant thought, brilliant I say! At about 10:30PM I popped into the kitchen and started experimenting. Baking is so cathartic for me, despite the hour. Within about 45 minutes I had whipped up these beauties, within about 90 minutes I had devoured 2 of them. I’ll say 2 here because it’s a much more socially accepted number.

These are doughnut like in texture, soft and pillowy, and filled with a sweet honey cream cheese center. The best part, and I mean, the BEST part, is the butter and cinnamon sugar coating on the outside. When these 3 meet up in the hot box that is your oven, it’s like magic. Preheat the oven to 350°

Start by combining the butter, sugar, egg and vanilla in your mixing bowl. Mix on medium high until well combined.

Once those are mixed, combine your flour, baking powder, salt and cinnamon (all dry ingredients) into a sifter and sift into a separate bowl.

Dump your dry ingredients into your butter mixture, 1/2C at a time, alternating with your milk.

Your batter will be sticky and look like this:

In a different bowl (using a hand mixer if necessary), combine the cream cheese, honey, sugar and vanilla.

Scoop the dough out onto a silpat or parchment lined cookie sheet and make small pockets in the center using a spoon.

Add a small scoop (about 1 1/2t) of filling to the pocket of each ball of dough.
Add 1 1/2t of filling to the pockets you created in each cookie

 

 

 

 

 

 

Drop another tablespoon or two of dough on top of the filling and, using your fingers, spread the dough out until the filling is completely covered.
Use your fingers to smooth the dough over the filled centers

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Bake at 350 for 16-18 minutes, until edges are slightly golden and the tops are no longer glossy. After removing them from the oven, let them cool (just slightly) for about 3 minutes. Then, melt your butter in one bowl, and mix your cinnamon/sugar in another- and get to dippin’! You will want to leave the cookie in the butter for a few seconds so it gets a good soak, then cover it in cinnamon sugar.

Let the cookies rest back on the cookie sheet until they are cool. Good luck waiting that long- it’s nearly impossible. And really, they are equally as delicious when they are warm so who cares? They do develop more flavor as they cool, however.

8 medium size cookies

Ingredients

    Cookie Ingredients
  • 6T unsalted butter
  • 1/2C sugar
  • 1 egg
  • 1t vanilla
  • 1 1/2C Flour (sifted)
  • 1 1/2t baking powder
  • 1/2t salt
  • 1/2t cinnamon
  • 1/2C milk
  • Filling Ingredients
  • 4oz. cream cheese
  • 1 1/2T honey
  • 1/2t vanilla
  • 2T sugar
  • For dipping
  • 4-6T unsalted butter
  • Cinnamon Sugar
  1. Preheat the oven to 350°
  2. In your mixing bowl, mix butter, sugar, egg and vanilla on medium high until well combined.
  3. In a separate bowl, sift together flour, baking powder, salt and cinnamon.
  4. Add the dry ingredients to your butter mixture, 1/2C at a time, alternating with the milk. Mix until combined, scrape down the bowl and mix again briefly, do not overmix!
  5. Grab your cookie scoop and place cookie dough balls on parchment or silpat lined cookie sheets.
  6. Make a small pocket in the center of each cookie- big enough to accompany 1 -1 /2t of filling.
  7. Place the filling in each pocket and top with another 1-2T of dough.
  8. Use your fingers to spread the dough over the filling until filling is covered.
  9. Place the cookie sheet in the oven and bake for 16-18 minutes, until the edges are barely brown and the tops are no longer glossy.
  10. Once the cookies are done, let them cool for about 3 minutes and melt your butter in a bowl large enough for dipping. Place cinnamon sugar in another bowl, again, big enough for dipping.
  11. Dip each cookie in the butter first, letting it soak for a few seconds before dipping (and covering) in cinnamon sugar. Don't skimp!
  12. Place them back on the cookie sheet to continue cooling, or place in your mouth, whatever strikes your fancy!
